There was always interest and curiosity to know how they were organized, prepared and presented various foods people and regions who have lived in other times and other societies. Further, still consuming? What were the flavors of the foods of yore? More precisely: what were the tastes of food pre-Columbian cultures? The menus were so exotic compared to today? In trying to clarify the cultural identities and feed these nations that bloomed in the highlands of Mexico and the Yucatan peninsula, perhaps it can be assumed the "taste" of food passed over times. As for cultural identity, on one hand the Aztec legends revealed by the gods indicated the construction of beautiful Mexica capital. Narrated the saga of gods and warriors and the ongoing need of the Sun God to feed on human blood. On the other hand the sacred book Popol Vuh of the Maya people unveiled the origins of corn and the song of Creation of the Fourth World. The identity is shown by their food tastes and knowledge in relation to care in food preparation, wealth of spices, aroma and the variety of fruits and vegetables and exotic flavor of meat and fish. In both civilizations corn was a symbolic image of strength, unity and solidarity. And the use of cocoa as a drink of the gods and the use of pepper are also identity. Sempre houve interesse e curiosidade de se saber como eram organizado, preparado e apresentado os diversos alimentos de povos e regiões que viveram em outras épocas e em outras sociedades. O que consumiam, quais eram os sabores e quais eram os gostos alimentares das culturas pré-colombianas? Ao tentar esclarecer as identidades cultural e alimentar dessas nações que floriram no planalto mexicano e na península do Iucatã, talvez se possa presumir do "gosto" alimentar de épocas preteridas. Quanto à identidade cultural, de um lado as lendas astecas reveladas pelos deuses indicavam a construção da belíssima capital Mexica. Narraram a saga de deuses e guerreiros e a necessidade contínua do Deus Sol de se alimentar de sangue humano. De outro lado o livro sagrado Popol Vuh dos maias desvelaram as origens das gentes de milho e o cântico da Criação do Quarto Mundo. Quanto à identidade alimentar é mostrada pelos seus sabores e saberes em relação ao esmero no preparo dos alimentos, na riqueza dos temperos, na variedade e no aroma de frutas e legumes e no sabor exótico de carnes e peixes. Em ambas civilizações o milho era uma imagem simbólica de força, união e solidariedade. E o uso do cacau como bebida dos deuses e o emprego da pimenta são também identitários.
