  • Descrição: Because of the legal argument of the de minimus theory -- some amounts of a cancerous substance are so small as to be of no health significance, a concept of risk management has been created by regulators. This article explores not only the history of this concept, but also outlines suggested procedures for managing food safety risks. The fact that Americans are living longer with greater exposure to carcinogens as well as greater demands for healthier foods increases the need for food safety management.(jd-b)
